Locust Bean Gum
Locust bean pods are the complete fruit of the carob tree, harvested
once a year in late summer. Each pod contains an average of ten seeds,
which undergo a completely chemical-free thermomechanical dehulling
process. Subsequently, the endosperm is gently separated from the germ
and seed coat through moderate crushing, resulting in carob kibbles.
These kibbles are then milled into locust bean gum. Locust bean gum
provides smooth flowability, freeze-thaw stability, and appropriate
thickening effects to a wide range of products.
